Perhaps this isn't the most exciting of posts, like my broccoli with red pepper flakes post--now there's a classic. But this recipe idea is easy peasy. On the days I work, I'm all about convenience and frozen burritos are something easy to grab and throw into a lunchbox. Yet, typically frozen burritos aren't considered the healthiest of items and also can be a tad bit bland (rice, beans, chicken and cheese? where's the veggie love?). So, about once a month, Crockett and I whip out the can opener and make our own burritos to freeze.
WHAT YOU'LL NEED
2 15 oz. cans black beans
1 15 oz. can corn
2 10 oz. cans diced tomatoes with green chiles
1 jar green salsa
1 8 oz package shredded cheese
2 packages FlatOut Healthy Grain flatbread
**we use these instead of whole wheat tortillas because they fold easily without cracking...and because they come in 3 packs at Costco. Boo-yeah. Double whammy.
plastic wrap &/or tin foil
WHAT TO DO
After opening, rinse black beans, corn, and tomatoes with cold water (this helps lower amount of sodium in canned items). Then, combine in a bowl and mix well. Place 2 to 3 heaping tablespoons of mixture onto tortilla. Drizzle a tablespoon of green salsa over the top, and then sprinkle on about a tablespoon of cheese.
Roll up burrito style and cover with plastic wrap or tin foil. Ta-da! Freeze!
How easy was that? And now you have whole-grain, veggie-filled, flavor-packed burritos to enjoy!
PS--You know you're sleep deprived when you keeping typing homemade as home-aid. I think I could use one of those.
do they taste as good as the lean ole chicken burritos? considering how much Ava boo loves those maybe i should make her a bunch of these for a happier body.
ReplyDeleteSounds delicious. Have you tried adding chicken (already cooked of course)? This would be much cheaper and healthier that eating lunch out everyday.
ReplyDeleteHmm, well I think they taste better than the Lean Ole. Could leave out the green salsa if making it for the kiddos. And, I haven't put in the chicken, but that is a great idea!
