Slow cookin'-- Lentil Thyme!

Look at all the fun things you can do once you have a crockpot!
Special thanks to my good friend Andrea for sending me this recipe.  As I was telling her, I don't really love crock-potting.  I have vivid smell memories from my teenage years of waking up late on weekends, and eating my cereal while surrounded by roast beef and onions.  However, now that I'm older I understand.   I really hate to argue with convenience. So, I find myself in an odd tug-of-war between smelling my dinner allllll day long and not having to worry about cooking dinner alllll day long...After trying this recipe, I do believe I'll try more slow-cooker recipes.

4 great things about this recipe: 1) someone made it before me, so I knew it'd gonna be good, 2) all the ingredients I magically had on hand, 3) looking over the ingredient list, this meal is pretty easy on the wallet, and 4) it didn't come with a title, so I got to make one up. 

Lentil Thyme!

INGREDIENTS
6 cups chicken or veg broth
1 cup lentils
2 diced carrots
1 chopped onion
2 diced celery stalks
3 tablespoons uncooked rice
2 tablespoons minced garlic
1 teaspoon thyme
1/2 teaspoon salt
pepper

WHAT TO DO
Everything in the crockpot for 8 hours on low.  When it's done, puree about half of it and then mix it back in.  Serve with non-fat sour cream.

  1. Today I am supposed to make a sauce for spaghetti using lentils and fresh tomato. I think I will just open a can although I have lentils I could cook . I will check out the difference although I believe it will be a higher sodium count, differences in taste and nutrients. I get lazy sometimes.

  3. This is in the crock pot as we speak. I'll let you know what I think tomorrow. I ran out of chicken broth (6 cups is a lot!), so I used some water. Hopefully that didn't affect it too much.
