Fast n' Healthy Lunches

My brother was sayin' he'd like a post about what the "best" or "most healthy" options are when pulling up to a drive through...and I'll get to that soon.  Eventually.  Maybe next week??  The delay comes not from a lack of interest, but just that I never eat fast food--soooo I'll really have to put my back into it.   In the meantime, any specific fast-food joints you'd like me to cover??

Don't get me wrong--it's not like I have the world's most healthiest diet (unless you count cinnamon bears?).  It more just comes down to laziness.  Yes, I'm too lazy for fast food.  If I'm out and about and hungry, I'd rather just drive home and heat somethin' up rather than pull up to McD's.  This is probably cuz I'm a total mess at the drive-thru.  It seems I can never find the options fast enough, and then get all flustered, and I then drive away with something I didn't even want.  I mean, can someone please tell me where the 4 piece chicken nuggets is on the menu??  Last I checked, I couldn't find and ended up with the chicken selects.  A real bummer.  Anyway! For now, I thought I'd share other healthy "fast" food ideas.

Since I usually pack my lunch for work, but frequently am also rushing out the door...my lunches end up being some sorta of grab n' go version from my fridge.  Over the years I've honed it down to these easy items:

Mix n Match as you please:

-yogurt
-cottage cheese
-string cheese
-hard-boiled egg
-lunch meat
-edamame

-v8

-bell peppers (pre-cut, seriously, a great time saver!)
-celery sticks
-baby carrots
-sliced tomato
**dip with hummus

-Triscuits
-pita bread/wrap
**pair with cheese & lunch meat for your own "lunchable"

-apple
**great dipped into PB or yogurt
-pear
-orange
-grapes (if I've pre-washed 'em)
-LARA bar

-peanut butter
-hummus

-home-made frozen burrito
-Lean Cuisine "Spa" variety. 2 servings veggies, made with whole grains,  no preservatives.  Pretty alright for a microwave dinner.

(Due to my 10 hour days, I usually pack something for a snack, & dinner as well)

So there you have it.  Pick a few from each category, and that's the basic jist of how I build my lunches.  When I have time, I'll throw a sandwich or salad together, but all in all this stuff usually gets me by. What about you?  What are your go-to "fast" food items??  Not just asking, as I really would love some new ideas. ;)

  1. We brown bag here too, and our "go to" is chicken salad sandwich. I usually make a batch every sunday, which last through most of the week. Crock pot 3 chicken breasts with chicken broth and a few dashes of mccormick montreal chicken seasoning. When it's done, dice up small, mix with dices celery, dices green onions, spicy mustard and a little light miracle whip. yummy. add to flat bread, and voila... lunch. :)
